A famous Sichuan dish, created during the Ching Dynasty; using diced cucumber, bamboo shoots, roasted peanuts, spiced yellow bean sauce and a Chinese vinegar. Originally a highly spicy dish. Another famous dish from Sichuan. Beef, chicken or fish on a bed of bean sprouts, cooked in broth with chilli oil, baby chillies and Sichuan pepper (the latter creating an unusual tingly numbness in the mouth!), with garlic, ginger and spring onion to enhance its rich and spicy flavour.
